Summer at 108 is an experience of smaller dishes based around the best ingredients the season has to offer. Each serving is meant to be enjoyed on it’s own, but is a part of a greater picture.
The menu is served in two parts – cold and hot.
Served for the whole table.

COLD

with salted gooseberries and spruce wood oil

with a pistou of summer herbs

3. DANISH LOBSTER

and white currants

4. GRILLED COURGETTE

marinated in miso and maitake mushrooms

in a sauce made from cep mushrooms, butter and hazelnuts

with basil and pine salt

with toasted barley and beech nuts

8. CUCUMBERS FROM KROGERUP

with fennel and white currants

9. CURED LAMB

with horseradish and rose hip seed oil

1. GLAZED PORK BELLY

with a sauce of dark berries and spices

2. SEASONAL HERBS

marinated in gooseberry juice

3. LAST YEAR’S PICKLES
